Warning: Patience required...
As tempted as you are to just cut the long grass straight off this is a very bad idea. The leaves of grass are used to trap sunlight in order for the grass to grow through the photosynthesis process. By cutting the grass straight off you are going to cause serious damage which often shocks the grass, killing it and turning it brown. If you continue to mow your lawn incorrectly like this, your lawn will end up patchy and sparse with weeds and moss appearing.
How to cut long grass:

The 3rd cut
Now you can adjust your mower deck to your desired cutting height and mow everywhere one more time. Be sure to change direction regularly as the grass can get flattened during the mowing process and begin to grow at an angle. Try to maintain this length.
