What are Kamado barbecues and smokers?

The Kamado grill has adapted ancient Japanese cooking customs with modern technology, making the Kamado completely unique among today’s standards of barbecuing. These clay grills are domed in shape and the thick walls are made entirely of a ceramic shell. The ceramic shell can endure massive amounts of heat. The Patton Kamado can reach an impressive 400 degrees Celsius. Ceramic Kamados hugely benefit from their clay structure as this material is known to absorb the intense heat, retain it, and reflect this heat back into the cooking process, creating unmatched insulation.

Excellent ventilation and airflow allow the hot air to circulate the dome and surrounds the meat to cook evenly and quickly. The airflow can also be regulated to provide the perfect cook for you. As a result, the Kamado can be used not only as a grill but also as a smoker and and outdoor convection oven. The Kamado can do it all!

How does the Kamado work?

The most important thing about using a Kamado is that THE LID MUST BE CLOSED AT ALL TIMES. If you take anything from this blog post this is the most important piece of information to known when using a Kamado. When closed, the lid of the Kamado completes and seals the dome shape which allows for a current of hot air to circulate evenly around the meat being cooked.

When lighting the Kamado open the air vents fully so the oxygen can burn the charcoal intensely and reach the desired temperature. Afterwards regulating the temperature is simple. A Top Tip from our experts is to never use any form of lighter fluid when starting up a Kamado. The uncoated ceramic frame will absorb the fluid which will then circulate throughout the cooker and transfer onto your meat.

Powerful insulation properties mean the Kamado has a lower charcoal consumption than standard barbecues. It does not need to be topped up with fuel throughout the cooking process. Once lit, the Kamado will stay lit and work independently.

Another Top Tip from our experts is that we highly recommend using lump charcoal as opposed to any sort of charcoal briquettes. You will not regret this decision as the lump charcoal will allow the grill to reach those high temperatures and maintain that level of heat. Charcoal briquettes tend to give off a smell which you do not want as you cook. Overall, the lump charcoal is simply better suited to this unique type of grill.

Cooking with a Kamado

The thick ceramic walls slowly build up heat which is then steadily retained for long periods of time. You can low and slow big cuts of meat without having to interfere with the cooking process.
